Update Docs to Show Use of Consumer<EntityExchangeResult> in WebTestClient.Builder

As of 5.3 in spring-projects/spring-framework#26662, it is possible to set a Consumer<EntityExchangeResult> once, globally at the WebTestClient.Builder level. The docs could be updated to show that.
