Update tests to tolerate breaking change in MockHttpServletRequestBuilder

The changes made for spring-projects/spring-framework#24556 in Spring Framework 5.2.4 break a number of REST Docs' tests. The tests need to be updated so that they continue to work with Framework 5.1.x while also working with 5.2.x.
