Create Courses: SIS ID generation

Two related issues:

1. Newlines at the end of course names seem to be getting transformed into dashes, they should be getting trimmed instead.
2. Probably better to simply default to putting a dash between the prefix and the course name, rather than expecting the user (me) to remember to put the dash into the prefix.
