Installation docs on main have mismatched versions

Our installation docs on the main branch (both installation.md and the helm README) have a user install v1.0.0 of the Gateway API crds, and v1.0.0 of NGF. The latter doesn't support the version of the former.

Acceptance:
Our installation docs in the main branch need to be accurate about which versions to install of each component. If we mention installing the latest release, then we have to match the version of Gateway API to that release, otherwise we should be referring to the "edge" version of NGF.

• cherry-pick these changes into the docs/hugo-docs branch per the formatting of the new site in that branch

Also update release process doc if required for these changes.

how do i install from edge?

EDIT:
kustomize chartInflator seems to ignore the version.
one can pull the edge version manually issuing the following command:

helm pull oci://ghcr.io/nginxinc/charts/nginx-gateway-fabric --untar --version="0.0.0-edge"
