Renaming Project and APIs

Given the overall confusion around this project, it's likely time to rename the project to more closely reflect its scope and purpose. I think this would also be a good opportunity to refine the names of our APIs as well. I've created a doc with more details on what these renames could look like.

We'll aim for lazy consensus by Tuesday, December 10, at which point I'll move forward with PRs to make the changes.

• gateway-api-inference-extension
• InferencePool
• InferenceModel

Will translate those into PRs on Tuesday if nothing changes.
