deps: drop Python 3.10 when scikit-learn 1.8 releases #392
Description
scikit-learn/scikit-learn#30888 (comment) suggests that scikit-learn plans to drop Python 3.10 in v1.8. This is currently scheduled for November 15 2025: https://github.com/scikit-learn/scikit-learn/milestone/66. We should drop it when they do.
This would unblock updating to jax 0.7.0 in some of our envs: #386
