[python] client bug fixes + type hint improvements

• Fixes query parameters json serialization [Bug][Python] Generated Python client does not properly serialize JSON query parameters #11044
• Fixes [BUG] [PYTHON] Missing 'typing_extensions' in requirements.txt #13621
• Fixes [BUG] [Python][Template] client default headers override explicitly passed headers #9648
• Improves endpoint type hints
