nit: restoring workspace is glitchy

Not a blocker for release 0.7.0 but when I restore an archived workspace, it disappears from the list.

Thoughts:

• we might be able to make use of the keepPreviousData util exported from @tanstack/react-query
• we might be able to make use of mutateAsyc and toast.promise to indicate that the request is happening, and we are refreshing data
• an alternate approach could be optimistic UI updates (though maybe better to wait until settled)
