(DOCSP-49339) Clarify that the Blockstore ID is S3-Compatible in transition procedure (#841)

The procedure to "Transition an S3-Compatible Snapshot Store" asks
readers to choose a new "Blockstore ID", which may confuse users. Reword
this step to clarify that you choose an S3-compatible store from a drop
down.
