Make `@sentry/opentelemetry` compatible with OTEL v2

### Description

We want to widen the peer dependency ranges of our opentelemetry package to allow both v1 and v2 of the OTEL SDK packages.

We should add an E2E test for this to ensure it works with v2. For now, our own usage will remain on v1.
