Enable SMT tests fixed by rudimentary struct support

This PR enables SMT tests fixed by rudimentary struct support.
These tests now pass due to the functionality added in PR7740.

• Each commit message has a non-empty body, explaining why the change was made.

• The feature or user visible behaviour I have added or modified has been documented in the User Guide in doc/cprover-manual/
