Docs: remove Amplify GraphQL section from docs

What were you searching in the docs?

The AppSync GraphQL docs include a section dedicated to Amplify CLI GraphQL transformers.

Since then, Amplify has moved away from the CLI and launched Amplify Gen 2 (1y+ ago) which has its own way of defining function resolvers for GraphQL types.

Is this related to an existing documentation section?

How can we improve?

We can remove the section from the docs.
