Upgrade Lit.dev samples/tutorials to use Lit 3 pre-release

### Context

Recently lit.dev was versioned so that we could separate v2 and v3 documentation. #1108 

But all playgrounds are still on Lit 2.

## Completion criteria

All unversioned playgrounds/samples/tutorials/gists should be using Lit 3 by default.
